RECIPE

GINGERSNAP COOKIES

3/4 cup shortening
1 cup brown sugar
1/4 cup molasses
1 egg
2 1/4 cups sifted enriched flour
2 teaspoons soda
1/2 teaspoon salt
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon cloves

Cream together first 4 ingredients till fluffy.  Sift together dry ingredients; stir into molasses mixture.  You can add a little more ginger for more of a ginger taste.  Form in small balls.  Roll in granulated sugar and place 2 inches apart on greased cookie sheet.  Bake in moderate oven (375 degrees) about 10 minutes.  For softer cookies bake 2 to 3 minutes less.  Cool slightly; remove from pan.  Makes about 5 dozen.

RECIPE
GINGERBREAD CAKE
1/4 cup shortening
1/4 cup firmly packed light brown sugar
1/4 cup granulated sugar
1 large egg, lightly beaten
1/2 cup buttermilk
1/4 cup light molasses
1 cup all-purpose flour
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Heat oven to 375 degrees. Lightly spray 8-inch round cake pan with non-stick baking spray, set aside.
Combine shortening, brown sugar and granulated sugar in large bowl. Beat with electric mixer at medium speed until well blended. Beat in egg, buttermilk and molasses until well blended.
Combine flour, ginger, cinnamon, baking soda, cloves, nutmeg and salt in medium bowl. Add to creamed mixture; mix well. Pour batter into prepared pan.
Bake at 375 degrees for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Turn out onto cooling rack.
Makes 8 servings.

Fall is on it's way. The temperatures have really cooled down so much that I needed a jacket this morning. I understand why Eureka Springs is so busy in October...it's the weather. The cool, dry air is just so refreshing. Of course, there are lots of things going on in October as well. The annual Corvette Festival is this weekend. The Historical Museum will be hosting "Voices from the Silent City" again this year on two weekends at the cemetery. Find out some little-known history about some of our past citizens. For art lovers, the 2nd Saturday Gallery Stroll has new and interesting works. And the big event of October is the Fall War Eagle Antique Craft Show that gathers hand-made items from across the country for sale. Eureka's own Ozark Folk Festival starts the last Sunday of October and is the longest running folk festival in the United States.

RECIPE

GERMAN CHOCOLATE PECAN PIE BARS

3    cups pecan halves and pieces
1 3/4    cups all-purpose flour
3/4    cup powdered sugar
3/4    cup cold butter, cubed
1/4    cup unsweetened cocoa
1 1/2    cups semisweet chocolate morsels
3/4    cup firmly packed brown sugar
3/4    cup light corn syrup
1/4    cup butter, melted
3    large eggs, lightly beaten
1    cup sweetened flaked coconut

Preheat oven to 350 degrees F. Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until lightly toasted and fragrant, stirring halfway through.

Line bottom and sides of a 13x9-inch pan with heavy-duty aluminum foil, allowing 2 to 3 inches to extend over the sides. Lightly grease foil.

Pulse flour and next 3 ingredients in a food processor 5 to 6 times or until mixture resembles coarse meal. Press mixture on bottom and 3/4 inch up sides of prepared pan.

Bake crust at 350 degrees F for 15 minutes. Remove from oven and sprinkle chocolate morsels over crust. Cool completely on a wire rack (about 30 minutes).

Whisk together brown sugar and next 3 ingredients until smooth. Stir in coconut and toasted pecans and spoon into prepared crust.

Bake at 350 degrees F for 25 to 30 minutes or until golden and set. Cool completely on a wire rack (about 1 hour). Chill 1 hour. Lift baked bars from pan, using foil sides as handles. Tranfer to a cutting board and cut into bars.

The Eureka Springs annual Antique Auto Festival was held Friday and Saturday, September 7th and 8th, 2012. I hope you got to enjoy seeing the hundreds of antique and restored automobiles from all eras and manufacturers. This show is open to all makes and models of automobiles. Trophies were awarded for Best of Show, Best Paint and Best Engine in both the Original and Modified categories. Registration and judging will be 8:00 to 10:00 am at the Pine Mountain Village.

RECIPE

Tropical Pineapple Coconut Bars

Base
1 package Yellow cake mix
1 ½ cups quick-cooking rolled oats
½ cup butter, softened
1 egg

Filling
½ cup all purpose flour
1 (14oz) can sweetened condensed milk (not evaporated)
1 (8oz) can crushed pineapple, well drained, reserving liquid
½ teaspoon nutmeg

Topping
1 cup chopped macadamia nuts
1 cup coconut
1 cup vanilla milk chocolate chips

Glaze
1 cup powdered sugar
4 to 6 teaspoons pineapple liquid

Heat oven to 350.
Lightly grease 13x9 inch pan.
Combine all base ingredients at low speed until crumbly.
Reserve 1 ½ cups of the crumb mixture.
Press remaining crumb mixture in bottom of greased pan.
Lightly spoon flour into measuring cup; level off.
In medium bowl, combine all filling ingredients; blend well.
Pour into crust-lined pan.
Add all topping ingredients to reserved crumb mixture; mix well.
Sprinkle evenly over filling.
Bake at 350 for 30 to 40 minutes or until golden brown.
Cool completely.

In small bowl, combine powdered sugar and enough reserved pineapple liquid for desired drizzling consistency; blend until smooth.
Drizzle over bars.
Store in cool place (refrigeration not necessary).
Makes 16 bars.

RECIPE

CARAMEL CAKE
1   Caramel Cake Mix, baked according to directions in a 9x13 pan
1/3    cup hot fudge ice cream topping
1/3    cup eagle brand condensed milk

While cake is hot from the oven, poke holes in the cake at about 2" intervals. Warm hot fudge and eagle brand in a glass measuring cup in the microwave, mixing every few seconds until it's thin enough to pour. Pour mixutre over cake, allowing time between coatings to soak in. Set cake aside to cool.

FROSTING
Mix 3/4 cup granulated sugar with 1/2 cup boiling water. Stir until dissolved. Cool.
Add 1/3 cup meringue powder and beat until mixture peaks. Stir in 1 pound powdered sugar. Mix until completely blended.
Add 2 cups Crisco shortening and mix until you reach desired consistency.
Frost cake. Leftover frosting will keep in the refrigerator for 2 weeks.

Drizzle caramel ice cream topping over cake and serve.

Eureka Springs Bed and Breakfast June Newsletter

June weather has been predicted to be mild, with high temperatures in the mid-80's. It's been really great weather lately to get outside and enjoy. We've been doing a little motorcycling lately and it's been perfect.

We just finished spending the last few weeks updating our cookbook. We've added about 20 new breakfast, bread and dessert recipes to our favorites. It now has over 70 recipes and it's only $5, or $7 with shipping. Be sure to pick one up. One of our newer recipes, Quick Mississippi Mud Cake, is below. Every time we've made this, our guests just rave. You have to try it.

Most people come to Eureka Springs for relaxation and romance and there's always something different going on in Eureka Springs. The 2nd Saturday Gallery Stroll will be June 14. The City’s art galleries are joining forces to stage a monthly “Celebration of the Art of Eureka” 6pm to 8pm. Galleries have special exhibits and open houses. Opera in the Ozarks starts later this month. The season is short, so don’t miss out. The finale will be on July 20. The Great Passion Play begins there full schedule in June, playing every night except Sundays and Wednesdays at 8:30. We've continued our Buy-One, Get-One-Free Passion Play Ticket Special for June. If you are thinking about seeing the play again, don't miss this special.

RECIPE

QUICK MISSISSIPPI MUD CAKE

Fast and delicious recipe for busy cooks.

1    cup chopped pecans
1    16 oz container marshmallow creme (fluff)
1    milk chocolate cake mix

Toast pecans on a baking sheet for 5 to 10 minutes until nicely toasted. Set aside to cool.
Mix and bake cake mix according to box directions and pour into a 11x14 baking pan.
Place pan in oven and start making frosting below so it will be ready while the cake is still warm.
Continue to bake cake until it tests done.
Remove cake from oven and spread marshmallow creme on warm cake.
Pour frosting over marshmallow layer as evenly as possible. Avoid spreading frosting when it's on the cake so marshmallow layer stays intact.
Sprinkle toasted pecans over the soft frosting while still warm.
Cool and serve.

Chocolate Frosting
1/2    cup butter
1/3    cup unsweetened cocoa
1/3    cup milk
1    16 oz package powdered sugar
1    teaspoon vanilla extract.

Stir together butter, cocoa and milk in a medium saucepan over medium heat until butter is melted. Cook, stirring constantly 2 minutes, or until slightly thickened; remove from heat.
Beat in powdered sugar and vanilla at medium-high speed with an electric mixer. Work quickly while frosting is still hot. Frosting should be a pourable-consistency.

Eureka Springs is alive with art and activities during the month of May. All month long, the city celebrates with an Arts Festival, art exhibits, receptions, exhibits, gallery strolls and free concerts. It's a wonderful time to visit and admire the beautiful scenery and art that is produced in Eureka Springs. The War Eagle Craft show is also this month and always draws big crowds to see and purchase the hand-made crafts.

The Great Passion Play reopens for the 44th season on May 4th. Read below for our Buy One - Get One Free Passion Play offer. The outdoor performance features over a hundred actors and includes live animals.

Seems like May the month for car shows. Come out and enjoy the PT Cruisers Rally May 4th through the 6th, Miatas in the Ozarks May 19th through 22nd and the 18th Annual Mustang Show will be held May 26th at the Pine Mountain Village.

Don't miss Blues Weekend the last weekend of May. This event has become a premier event for the Ozarks. Many local and national groups will perform in several different venues all over town. If you love the blues, you gotta be here.

RECIPE

SKILLET BREAKFAST CASSEROLE

You can substitute an equal amount of shredded Swiss, Gouda or Pepper Jack cheese for the cheddar.

3    slices bacon, chopped
2    slices white sandwich bread, cut into 1/2" pieces
6    tablespoons heavy cream
4    large eggs
1/8    teaspoon salt
1/8    teaspoon pepper
2    scallions, sliced thin
1/2    cup shredded cheddar cheese

Adjust oven rack to upper-middle position and heat oven to 475 degrees. Cook bacon in 8-inch nonstick, ovensafe skillet over medium heat until crisp, about 8 minutes. Using slotted spoon, transfer bacon to paper towel-lined plate. Pour off all but 1 tablespoon fat from pan.

Add half of bread to skillet and cook over medium heat, stirring frequently, until golden brown, 3 to 5 minutes. Transfer to medium bowl and toss with untoasted bread.

Whisk cream, eggs, salt and pepper in another medium bowl until smooth. Stir in bacon, scallions and cheddar. Add egg mixture to now-empty skillet and cook over medium heat, using spatula to scrape bottom of pan, until eggs are just beginning to set, about 1 minute. Fold in bread and lightly pat mixture into even thickness. Bake until puffed and golden brown, 7 to 9 minutes. Serve.

We are so proud to have won "BEST DESSERT" at the recent Souper Soup fundraiser for the Eureka Springs Historical Museum that was held immediately following the Victorian Classic. Our Caramel Italian Cream Cake was chosen from among the desserts submitted by Eureka Springs B&B's. This is a worthy cause to help preserve Eureka Springs History and we're so glad to support them. Plenty of things to see and do this month. There is a new music show in town. The Patsy Cline Show by Tracy De Mille is a 75 minute show running April through October every day except Tuesday and Thursday. Tracy's theatre in Branson was damaged in the recent tornado, so she's relocated to Eureka Springs. The Second Saturday Art Gallery Stroll celebrate the Art of Eureka. Come visit the galleries and see works from the many talented artists in the area.

Carving in the Ozarks returns to the buzz of chainsaws. Watch carvers in action as they complete their large works. The Annual Springtime in the Ozarks convention will also be in town this month.

The Saint Petersburg String Quartet will perform at the AUD Sunday, April 29. Reviewed as one of the world's most esteemed chamber ensembles. This performance is a fundraiser for CICA Festival to be held in June.

Don't miss all the cozy and intimate restaurants, quaint shops and unique galleries all set in a picturesque village setting. Music in the Park returns this month to add to the downtown ambiance.

RECIPE

HAM 'N BISCUIT EGG BAKE

Prep Time: 20 min ; Start to Finish: 1 hr
Makes: 2 servings

2 Pillsbury® Oven Baked frozen southern style biscuits (from 25-oz bag)
2 eggs
1/2 cup milk
1/4 teaspoon ground mustard
1/4 teaspoon greek seasoning
1/4 teaspoon dill weed
1/2 cup diced cooked ham
1/2 cup shredded Colby/Pepper Jack/Cheddar cheese (4 oz)


Heat oven to 350°F. Place biscuits on cutting board; let stand 10 minutes to thaw.
In small microwavable bowl, microwave broccoli uncovered on High 1 minute; drain on paper towel.
In medium bowl, beat eggs, milk and mustard with wire whisk until blended. Stir in ham, cheese and broccoli.
Spray 8x4-inch (1-quart) glass loaf dish or 1-quart casserole with cooking spray. Cut each biscuit into 8 pieces; arrange evenly in dish. (Optional: To bake in 3 ½ inch indivdiual ramekins, use only 4 pieces of biscuit, keep other ingredients in proportion)
Pour egg mixture over biscuit pieces in dish. Press down with back of spoon, making sure all biscuit pieces are covered with egg mixture.
Bake 30 to 35 minutes or until edges are golden brown and center is set. Let stand 5 minutes before serving.

Optional: Spice up your morning when you add some chopped chiles to the casserole and serve salsa on the side. Broccoli can be deleted.

Warm, sunny weather is on it's way at last. Outdoor activities like the Annual Victorian Classic Race and the Saint Patrick's Day Parade are just the thing to get you outside to enjoy beautiful Eureka Springs. The Victorian Classic racers cool down after the run at the Souper Soup lunch (open to the public). Enjoy great soups and desserts donated by local restaurants and Bed and Breakfasts. When is the last time you flew a kite? Get outside and fly one at the Annual Kite Festival.

The Pine Mountain Jamboree Music Show reopens this month as does the Intrigue Theatre for another thrilling season. Antiques lovers, now's the spring antique show! And of course, we're all Irish on St. Patrick's Day -- don your green, grab your favorite leprechaun and come enjoy the parade. Don't miss all the cozy and intimate restaurants, quaint shops and unique galleries all set in a picturesque village setting.

RECIPE

UPSIDE-DOWN APPLE FRENCH TOAST
1/2 cup butter
1 1/4 cup packed brown sugar
1 teaspoon water
3 granny smith apples
cinnamon, to taste
1 loaf french bread, sliced 1 1/2 inches thick
1 1/2 cup milk
6 large eggs
1 teaspoon vanilla
1/8 teaspoon nutmeg
sliced almonds for garnish (slightly toasted)

Combine butter, brown sugar and water in saucepan. Heat on medium until bubbling, stirring frequently. Place in a sprayed 9x13 dish and allow to cool for 20-30 minutes.
Peel, core and slice the apples. Place the slices in rows, overlapping, on top of the sauce in pan. Sprinkle with cinnamon. Place the slices of bread on top of the apples.
Mix together the milk, eggs and vanilla. Pour over the bread. Sprinkle with a little nutmeg. Cover and refrigerate.
Bake at 350 degrees for approximately 60 minutes or until golden brown and crispy on top. Cover with foil part-way thru baking if browning too early.
Place sliced almonds in a foil pan and toast in oven for about 8 minutes.
Loosen toast from the sides of dish with a knife. Place baking sheet upside down over dish and invert. Remove baking dish and separate slices for serving. Garnish with almonds.
Serves at least 10.
